The Lite FM Family has been very busy the past few weeks! We’ve been all around the DFW area spending time with our great listeners and  community. Here are a few pics from our recent adventures!!

Despite yucky weather, the Lite Crew, Tony Zazza, and the wonderful sales people at Southwest Kia in Mesquite, hosted an AMAZING spontaneous cookout!! Check out our cool photos from the rainy party !!

The Stand’s 1st Annual Mini-Hot Dog Eating contest is going to take place on Saturday June 2nd from 2pm-4pm. There are some amazing prizes for the top 3 finishers and proceeds benefit an amazing cause, The Mike Modano Foundation.

The Stand is a fabulous restaurant on McKinney Avenue that recently has gotten a lot of attention for it’s unique approach to concession style faire. On the side of building The Stand is having a local muralist paint a 15 foot by 60 foot mural of some of the most iconic landmarks in Dallas that all focus around an airstream trailer, which the stand has an original 1967 Airstream cut in half inside their restaurant. Pretty cool to see if you haven’t visited yet. The mural has 12 place marks for images of people and one of those people on the mural could be YOU!

The Mini-Hot Dog eating contest is the first of 2 events that will both benefit Modano’s foundation. You must register for this event to participate but here are the exciting details:

1st Place- receives $1,000 and their image to be painted on the mural and crowned the “Champion” for 1 year and will be recognized at the Live Auction event for the remaining places on the mural at the June 16th event.

2nd Place- receives $500

3rd Place- receives $250

I love Mexican food and being Italian I obviously LOVE Italian food as well. But taking the idea of Chicken Enchiladas and putting it over pasta seemed a bit off to me. I couldn’t have been more wrong. This recipe is hands down one of the best I have ever had/made. It’s delicious and I think you will love it just as much as I did!

CHICKEN ENCHILADA PASTA!

Ingredients:

2-3 chicken breasts, cooked & shredded {or shredded rotisserie chicken…I used the breasts}

2 tbsp. olive oil

2 garlic cloves, minced

1 medium onion, diced

1 red pepper, diced

1 {4 oz.} can diced green chiles

1/2 tsp. salt

2 tsp. chili powder

1 tsp. cumin

2 {10 oz.} cans green chili enchilada sauce

2/3 cups red enchilada sauce

2 cups shredded cheese {I used colby & monterrey jack}

1 cup sour cream

1 Package of Penne pasta

Optional toppings

Avocado

Green Onions

Black Olives

Tomatoes

The weather for tomorrow looks amazing and hopefully you will join me for our Cinco De Mayo Party at On The Border on Beltline Rd. in Addison. It’s going to be a blast! I will be there from 2-4pm, but the fiesta is ALL Day and Night!

With that said, I wanted to share one of my favorite recipes and this is an original. This is from my home kitchen to yours and I hope you love it as much as I do.

Tony Zazza’s Avocado Enchiladas!

Ingredients-

Corn Tortilla’s (or flour if you prefer)

4 Large Ripe Avocado’s (cut in half and scooped)

1 Medium Red Onion diced

1 Jalapeno (or more if you like REAL spicy) seeded and chopped

2 Medium tomatoes diced

1 TBSP Lime juice

1 Clove Garlic finely diced

Cumin to taste

Dash of Salt

FOR RED SAUCE Enchiladas-

1 Can of Hatch Red Enchilada Sauce

Shredded Cheddar Cheese

FOR GREEN SAUCE Enchiladas-

1 Can of Hatch Green Enchilada Sauce

Shredded Monterrey Jack Cheese

Directions-

1. In a large bowl, mix Avocado, Onions, Jalapenos, Tomatoes, Lime Juice, Garlic, Cumin and Salt. Yes, this is like making Guacamole.

2. Heat over to 350 Degrees.

3. Spoon filling on a corn tortilla and roll placing in glass baking dish with the fold down.

4. When dish is full, smother the tops with the Enchilada sauce of your choice and top with shredded cheese of choice.

5. Bake in over for 20 minutes at 350.

Serve and enjoy! These are VERY VERY tasty!

Tomorrow’s event at Three Dog Bakery in Southlake begins with a 10:30 registration and the Easter Begg Hunt gets under way at 11am. Your $5 donation goes to the Duke and Oliver Foundation and then it’s up to you and your four-legged friend to collect as many Easter Eggs as you can. The eggs will have treats, discount coupons, freebies and 1 lucky dog will score FREE DOG FOOD for 1 Year!

There are thousands of eggs to hunt and to claim your egg your dog must touch it with their noses or the owner will have to get down on all fours and touch with their nose to claim it. It’s a BLAST of a good time! You wont want to miss it!
